6 pieces Green Bell Peppers
1 pound Sweet Italian Sausage
1 pound Hot Italian Sausage
1 cup Fresh Grated Parmesan Cheese
4 ounces Fresh Peeled Garlic
8 ounces Fresh Chopped Mushrooms
8 ounces Broccoli Heads

Stuffed Peppers Directions

  1. Cut tops off of peppers and clean them out.
  2. Remove sausage meat from casings.
  3. Finely chop garlic.
  4. Chop mushrooms into small pieces.
  5.  Steam Broccoli until soft and mushy. (45-60 minutes)
  6. Cook sausage meat, garlic, and mushrooms. Fully cook the sausage. (Chop sausage into small pieces.) 
  7. After sausage mixture is cooked, mix in Fresh Grated Parmesan Cheese and broccoli in a large bowl. (Use gloves and mash up mixture by hand.)
  8. After stuffing mixture is thoroughly mixed and mashed, stuff peppers. Make sure you squeeze the stuffing into the peppers. Do not use to much pressure or you will break them.
  9. Cook stuffed peppers in a preheated 350 degree oven for 30 minutes.

Recipe notes

NOTE: If you are preparing peppers for later use, 24 hours or more, please cook for 45-60 minutes.
