Meat and Poultry

6 Boneless and Skinless Chicken Breast halves.

Herb and Spices

1/2 Teaspoon Garlic Powder
1/8 Teaspoon Black Pepper
1 Tablespoon Italian Seasoning Mix

Fruits and Vegetables

2 Ounces Garlic Minced (Equals approx. 2 tablespoons.)
2 Medium Onions Minced (Approximately size of large egg.)
4 Tablespoons Lemon Juice

Miscellaneous

6 Tablespoons Olive Oil
1 Cup White Wine
22 Ounces Chicken Broth
1 1/2 Can Artichoke Hearts (14 oz. Can)
3 Tablespoons Butter (Unsalted)
3 Ounces Capers (With liquid)

Chicken Piccata w/Artichoke Hearts Directions

  1. Strain artichoke hearts into a bowl save the liquid. Chop up artichoke hearts.
  2. Strain capers into a bowl save the liquid.
  3. Pound chicken breast halves down to make a uniform 1/2" thick cutlet. Cut cutlets into thirds.
  4. Mix the flour, garlic powder, salt, pepper, and Italian seasoning in a bowl. 
  5. One by one, lightly dredge the chicken pieces in your flour mixture.
  6. Heat, olive oil in a large skillet over medium-high heat. Cook chicken pieces until nicely browned (About 2 minutes per side.) Set chicken aside on a plate or in a bowl with paper towels to drain off excess oil. 
  7. In the same skillet, you cooked your chicken, sautee the fresh minced garlic and minced onions until onions are translucent. (About 5 minutes.)
  8. Add, White Wine to the skillet, turn heat up high. Reduce wine by half. (Approximately 4-5 minutes.)
  9. Add, chicken broth, lemon juice, artichoke hearts, liquid from artichoke hearts, and browned chicken to the skillet. Reduce heat to medium and cook until sauce thickens. (About 20 minutes.)
  10. Stir in capers and butter.
  11. Server with your pasta of choice.
