Fish

2 Pound Salmon (Fillet)

Herbs & Spices

8 Cloves Garlic
1 Teaspoon Basil
1 Teaspoon Celantro

Vegtables

1 Pound Mushrooms

Fillet of Salmon in a White Wine and Butter sauce. Directions

  1. Fine chop Garlic
  2. Slice Mushrooms ( Use a mushroom slicer)
  3. In a large stainless steel frying pan, Sautee mushrooms and garlic in 2 tablespoons of butter over medium heat. For about 10 minutes or until garlic begins to turn brown.
  4. Add, in Basil, Celantro, and Black Pepper then mix well.
  5. Add, in remainder of butter. (2 tablespoons)
  6. Add, White Wine and bring to a boil. After butter melts lower heat to and let simmer for 5 minutes.
  7. Place Salmon fillet in pan then spoon sauce over fish.
  8. Place entire pan in pre-heated 350 degree oven.
  9. Cook for 15 minutes then turn fish over and cook for an additional 15 minutes.
  10. Remove from oven and squeeze half a lemon over fish and server with veggies.

Recipe notes

If you do not have a large stainless steel frying pan you can use whatever large frying pan you have. The only thing you need to do to finish cooking is transfer the fish and sauce mix to either a small roaster pan or Pyrex Dish. DO NOT use any pan in your oven that is not considered oven safe. 

If you plan on slicing a lot of mushrooms like I do. Get yourself a mushroom slicer. Make sure it is one that has blades and NOT wire. The wire ones break very easily.
