6 pieces Artichoke
2 pounds Sweet Italian Sausage
2 pounds Hot Italian Sausage
4 ounces Fresh Garlic Cloves
1 piece Lemon
1/2 cup Plain Bread Crumbs
2 large Eggs

Stuffed Artichokes Directions

    Preparation

  1. Slice lemon in half.
  2. Mince 2 ounces of garlic.
  3. Slice up remaining 2 ounces of garlic.
  4. Prepare your artichokes. If you don't know how please see link in "Recipe Notes" 
  5. In a steamer pot fill 1/3 way with water or whatever is the maximum for your steamer pot.
  6. Put in lemon and sliced garlic into the water. 
  7. Place artichokes into steamer basket and steam for 25-45 minutes.
  8. Remove sausage from their casings.
  9. In a large frying pan, fully cook sausage and minced garlic. (Break up sausage, as if you were cooking chopped meat.)
  10. In a large bowl, mixed cooked sausage, eggs, and bread crumbs. 
  11. Gut steamed artichokes. This is not hard, you just have to take your time and be careful not to break the heart. I usually gut mine using a teaspoon, gently scrap the middle (choke) of the artichoke out. This will make a bowl for your stuffing.
  12. Stuff artichokes to just a little over the top of the leaves.
  13. Wrap artichokes in aluminum foil. (This is to prevent them from drying out.)
  14. Cook in preheated 350 degree over for 30 minutes.

How to prepare artichokes.

 

Please be aware that you can fully prepare stuffed artichokes a few days in advance and just cook them the day of your meal.

You only need to cook them for 45 minutes at 350 degrees. If you plan on cooking artichokes that your prepared in advance you have to wrap them in aluminum foil to prevent them from drying out.
