Ingredients

Seafood

2 Pounds Shrimp (Medium 41-50 ct)

Herb and Spices

2 Ounces Garlic (Minced)
1 Teaspoon Black Pepper
1/8 Teaspoon Crushed Red Pepper
2 Tablespoons Fresh Basil (Chopped)

Other

1 Cup White Wine
4 Tablespoons Butter
2 Tablespoons Olive Oil
1 Teaspoon Cornstarch or Flour (Chef's choice)

Chef Michael's Shrimp Scampi Directions

  1. Mix the white wine and cornstarch or flour together.
  2. In a large skillet, add, olive oil and butter. (Preheat the skillet, before putting in the oil and butter.)
  3. Add in, minced garlic, when it starts to brown, add in black pepper, crushed red pepper, and white wine.
  4. Bring to a boil then lower heat to simmer and let reduce by half.
  5. Add, shrimp and let cook until they all turn pink. (Depending on the size of the shrimp should take from 3-8 minutes. Larger shrimp take longer to cook.)

Recipe notes

You can serve as an appetizer, or over pasta as a main course, or over couscous as a main course. 

 

NOTE: The cornstarch or flour thicken up the sauce I do this so that the sauce sticks to the pasta or couscous.
